A Tale of Two N'Duja
Our former PQM colleague Tony's family owns the Ristorante Augustino where they have been making Tony's Grandfather's recipe for N'Duja to the delight of their customers for years. Now the delight is portable and available at PQM (in case the mention of gramps sounded retrospective, Nope, he's still making it himself).
Tony's company, Artisan, makes precisely one product - the N'duja. Theirs is a very traditional preparation with Calabrian peppers, more spice and a coarser grind with more fleck than...Our N'duja which is a finer ground, uses a mix of peppers that are...not at all traditional. The phrase 'spreadable salami' could be applied
There is absolutely no reason these two N'duja cannot anchor opposite ends of your home charcuterie tray. Come on in, hop over the curbside snow mountain and try them side by side.
