I never heard of nduja until we spendt 10 days in Calabria. Every morning I would eat it on toasted bread with fresh cheese and red Tropean onions. At our hotel in Tropea, the dining server's Mother made it fresh weekly for the hotel. They lived to the SE in the mountains.It's addictive, especially if you like hot (but not overly hot) meats. You'll come back for more!
